As the Production Manager at Cathay Dining, you will be responsible for overseeing all aspects of food production, ensuring that meals are prepared in compliance with customer specifications, food safety regulations, and strict delivery schedules. Your role includes driving food quality, operational excellence, quality control, cost management, and team leadership within a high-volume production environment.
Key Responsibilities
- Plan, organize, and manage daily food production in accordance with flight schedules, customer requirements, and menu specifications.
- Coordinate with internal logistics and procurement teams to ensure timely and sufficient supply of materials.
- Establish and standardise kitchen workflows and production processes aligned with operational schedules.
- Lead production teams to execute plans in accordance with quality and efficiency standards.
- Develop and implement structured training programmes to support business growth.
- Foster a high-performance culture focused on accountability, discipline, and efficiency.
Quality Assurance & Food Safety
- Ensure compliance with HACCP, ISO, GMP, and customer-specific quality standards.
- Monitor food quality and presentation to meet customer specifications and company standards.
- Conduct regular inspections, audits, and quality checks across production processes.
- Collaborate with Food Safety & Quality teams to ensure consistent adherence to standards.
- Lead root cause analysis and implement corrective actions for customer feedback and operational deviations.
- Maintain proper documentation, traceability, and audit readiness.
Cost Control & Resource Management
- Manage raw materials, ingredients, and inventory to minimize waste and shortages.
- Ensure recipe accuracy, yield control, and portion standardization.
- Monitor and optimize food cost, labour cost, and production efficiency.
- Collaborate with Logistics and Procurement team to maintain optimal inventory levels.
- Ensure proper handling and utilization of materials, equipment, and facilities.
Compliance & Safety
- Ensure full compliance with safety, hygiene, and regulatory requirements.
- Investigate and report incidents, non-compliance cases, and customer complaints in a timely manner.
- Ensure all operational processes are supported by approved Standard Operating Procedures.
Process Improvement & Operational Excellence
- Identify and drive initiatives to improve productivity, workflow, and cost efficiency.
- Implement best practices and standard operating procedures.
- Support innovation in food production, menu design, and packaging processes.
- Identify and resolve operational bottlenecks and inefficiencies.
- Promote a culture of continuous improvement and agility.
Requirements
- At least 10 years of relevant experience in large-scale catering, airline catering, or food manufacturing.
- Proven experience in managing production operations and teams in a high-volume environment.
- Strong leadership, people management capabilities and knowledge of food safety standards (HACCP, ISO, GMP).
- Strong organizational and operational management capabilities.
- Solid understanding of large-scale food production and airline catering operations.
- Excellent problem-solving and decision-making skills.
- High attention to details and commitment to quality.
- Ability to work under pressure in a time-sensitive, high-volume environment.
- Willingness to work shift duties, including nights, weekends, and public holidays.
